Dry Red Wine

Varieties: 
25% Cabernet Sauvignon from Kidmat Zvi vineyard in the Golan Heights, 25% Cabernet Sauvignon from Kerem Ben Zimra in Upper Galilee (Platto’s plot), 30% Syrah from the Judean Lowlands and 20% Petit Verdot from the Central Lowlands.

Growing regions:
Each growing region contributes its own unique climate and soil features:
The Golan and the Galilee – freshness and floral influences, the Judean and Central Plains – tannic structure, color intensity and herbal elements. Crop density ranged from 1.1 ton to 600 kg per dunam (¼ acre).

Production process
Each variety was harvested separately from the beginning of September to mid-October 2007. They were sorted manually, destemmed and cold-macerated for 3 days. Each variety was fermented separately in small tanks in order to identify the wine with the most potential. Cooling was halted after the initial stage and yeast was added to the warmed tanks in order to initiate fermentation. The wine underwent alcoholic fermentation for 7-10 days at a relatively low temperature to preserve the fruit’s aromatic components, and the wine remained sur lie (with the skins) for a further 15 days before pressing. After short sedimentation, each wine was transferred to new French oak barrels in November 2007 for 20 months of aging. The final blend was created at the end of the aging period from the different varieties taken from different barrels and bottled after a process of natural sedimentation with minimum filtering and clarification processes. The wine continued to age in the bottle for a year in the winery’s cellars.

Tasting notes:
The 2007 vintage had a lower-than-average yield of very ripe grapes balanced by vitality and concentrated fruitiness, intense color and a range of aromatic compounds. Harvesting was late due to a spate of heat waves, which delayed the ripening process for several days. Proper treatment in the vineyards allowed the grapes to develop aroma and flavor components without a significant increase in sugar levels.
The wine has a brilliant ruby-garnet color and prominent aromas of cassis, vanilla, black pepper and coffee with nuances of earthiness, herbs and smoked meat.
The Chosen Diamond 2007 combines our best vineyard plots with unconventional varieties, resulting in a rich, elegant, harmonious and full bodied wine. The wine has a long, persistent and harmonious finish typical of Old World wines.
