Dry White Wine

Chardonnay 40%, Sauvignon Blanc 35%, Viognier 25%
Growing region:
Upper Galilee – deep and well-drained basalt soil that results in a grape with an impressive array of concentrated aromas and excellent tartness.
Production process:
Each variety was harvested separately when optimally ripe and brought to the winery in small crates under refrigerated conditions. The bunches were pressed whole for optimal extraction of all the characteristics. The clear must then underwent low-temperature alcoholic fermentation. After fermentation the Chardonnay was aged in new French oak barrels while the Sauvignon Blanc and Viognier were transferred to year-old barrels following fermentation in stainless steel tanks.
The blend was created after the wines aged separately for 6 months and then bottled with minimal clarification and filtering. The wine continued to age in the bottle for about another year in the winery’s cellars.

Chosen Jaspar 2008 is an unusual blend of varieties that contribute individually to the wine’s complexity: Chardonnay for its structure and fruity features, Sauvignon Blanc for its crispy lemony character and Viognier for its tropical notes. Although ready for drinking immediately, under the proper conditions these wines will gain complexity and depth in the coming 2-4 years and will go beautifully with baked sea fish dishes, cream and mushroom based pastas as well veal and tahini dishes.
