Kidmat Zvi and Tel-Phares – in the Golan Heights planted in deep and well drained basaltic soil conducive to producing balanced grapes with rich aromas and color.
Production process:
The Cabernet Sauvignon grapes were harvested at the end of September 2008. After manual sorting and destemming they were placed in a cooling tank for 3 days of cold-soaking. This was followed by 2 weeks of alcoholic fermentation and a further 16 days soaking on the skins before crushing. The wine was transferred to French oak barrels for 15 months of aging. The final blend was created with wines from the different barrels and was then bottled with minimal filtering and clarification processes.
After bottling the wine continued to age for another year in the winery’s cellars.
Tasting notes:
The 2008 vintage had a lower-than-average yield of very ripe grapes balanced by vitality and concentrated fruitiness, intense color and a range of aromatic compounds. Harvesting was late due to a spate of heat waves, which delayed the ripening process for several days. Proper treatment in the vineyards allowed the grapes to develop aroma and flavor components without a significant increase in sugar levels.
Deep purple-black in color, the wine has dominant cherry and raspberry aromas laced with black pepper, eucalyptus and coffee.
Aquamarine 2008 is a full-bodied, harmonious and intense wine that may be drunk immediately but will continue to develop in the bottle in the coming years.
An excellent accompaniment with Beef Bourguignon, lamb ribs and full-flavored hard cheeses.
