Growing region: Lower Galilee – single vineyard on the banks of Nahal Tabor
Growing conditions and climate: A combination of deep clay and terra rossa with changing concentrations of pebbles, the soil is well drained and the roots effectively ventilated. The ripening season consists of hot dry days with intense sunshine and chilly nights, which is conducive to lush ripe fruit with rich color, flavor and aroma components.
Climate conditions in this region are particularly suitable for this variety, which requires dry heat in order to ripen fully and evenly without the risk of damage from bunch rot.
Wine production process: The grapes were night-harvested in September 2007.
After destemming the grapes were transferred to small fermentation tanks and cold-soaked for three days for optimal flavor and color extraction. Alcoholic fermentation was followed by maceration with the skins for almost three weeks before the grapes were crushed. After crushing the wine was lightly clarified and transferred to French and American oak barrels for 15 months. The blend was created from wines from the different barrels and bottled with minimal filtration and racking processes, and the wine continued to age in the bottle for a further six months in the winery’s cellars.
Tasting notes: The wine is deep purple in color with predominant aromas of ripe strawberries and black pepper enhanced by a minty freshness.
Binyamina Reserve Zinfandel is a full-bodied, generous and balanced wine that can be drunk immediately but will continue to develop in the bottle for several years.
