Growing conditions and climate:
The Sauvignon Blanc vineyards in the Upper Galilee are planted in a mixture of terra rossa and basaltic soil. The soil’s structure enables effective ventilation of the vine roots. The climate in the region is typically cool with cold nights, hot days and low humidity levels in the summer. These conditions are conducive to optimal development and quality of the grapes’ flavor and aroma components.
Wine Production process:
Manual harvest in the early hours of the morning and immediate delivery to the winery in small crates. The grapes were destemmed and crushed and the juice was then cold-fermented with the skins for 12 hours for maximum extraction of the skin’s aromatic components. The wine was transferred to stainless steel tanks for slow cold fermentation at a temperature of 10˚C to retain the grape’s herbaceous and fruity aromas in the wine.
Tasting notes:
The wine boasts a clean and distinct aroma that combines white peach and citrus scents, a tropical character with well a accented herbaceousness and an elegant, invigorating flavor. Best served with fish dishes, mature goat cheeses and vegetarian pies and quiches.
Best served chilled at a temperature of 10˚-12˚C.
