Growing conditions and climate: The soil in the Upper Galilee is terra rossa that enables effective ventilation of the vine roots. The soil in Neve Ilan is terra rossa with small pebbles that also assist with ventilation. Both regions enjoy low humidity levels and day/night temperature differences that are required for full ripening while preserving the desired acidity level in the grapes.
Wine production process: Manual harvest in the early hours of the morning. The grape clusters were crushed whole, as is the custom in Burgundy, in order to prevent the juice’s exposure to oxygen and other potential sources of damage. The juice was transferred to wooden barrels or stainless steel tanks where it underwent alcoholic and then malolactic fermentation. 70% of the wine was aged on the lees (sur lie) in French wooden barrels and then racked. 30% of the wine remained in stainless steel tanks. The final blend was created before bottling.
Tasting notes: A perfect balance of wood and fruity flavors. A complex, medium bodied wine, with a pleasant buttery aroma and apple and melon scents, that leaves the drinker with an elegant lingering flavor. It is best served chilled to 10˚ -12˚C
